Cool Cookies
This has got to be one of the easiest cookie recipes ever with each batch turning out perfectly light and moist. What I like is the variety of flavors that you can make given all the new cake mix flavors that keep popping up. I have done these using the lemon cake mix and they were wonderful, I added a little lemon zest for an added burst of flavor.

Hmmm...Who'd have thunk it? Certainly not I.
Unfortunately, I have a real dislike for Cool Whip, but I think this is a cool idea.
You won't even notice that it is cool whip in this recipe, you should give it a try.
what do they look like?
LOL
Too funny Nikki
They turn out soft and cakey and spread a little when they bake.
I like cake mix cookies when I am in a hurry to make cookies so I will definitely keep this variation in mind - the lemon ones sound great!
Only 3 ingredients sounds easy to me!

Lemon, yum! Perfect. I seem to be on a cookie kick lately. And simple... well, perfect!
Enjoy, Christine
A friend of mine told me about these several years ago. I love how easy they are to make. My favorite is to use spice cake mix and add raisins. I should add some small shredded carrots next time to make carrot cake cookies.
Carrot Cake Cookies sound wonderful, Meg. Thank you so much for the idea.
